  • 4 tbsp unsalted butter
  • 4 large cloves garlic, minced
  • 1 tbsp soy sauce (low-sodium or gluten-free tamari)
  • 1 tbsp fresh lemon juice
  • 1/2 tsp paprika (smoked or sweet)
  • 3 tbsp full-fat mayonnaise
  • 12 tsp sriracha or chili garlic sauce
  • 2 stalks green onions, sliced

Instructions

  1. Preheat oven to 400°F (200°C). Pat salmon cubes dry with paper towels and place in a medium bowl.
  2. In a small saucepan over low heat, melt butter. Remove from heat and whisk in minced garlic, soy sauce, lemon juice, and paprika.
  3. Pour the garlic butter mixture over the salmon and toss gently to coat. Let sit for 5 minutes to marinate.
  4. Line a baking sheet with parchment paper. Spread salmon bites in a single layer, ensuring they do not touch.
  5. Bake for 12-15 minutes until salmon is opaque throughout and flakes easily with a fork. Watch closely to avoid overcooking.
  6. While salmon bakes, whisk together mayonnaise, sriracha (or chili garlic sauce), and a squeeze of lemon juice in a small bowl to make the spicy mayo.
  7. Remove salmon from oven, transfer to a serving platter, and garnish with sliced green onions.
  8. Serve immediately with spicy mayo on the side for dipping or drizzled over the top.

Notes

Pat the salmon dry before cooking to ensure roasting rather than steaming. Do not overcrowd the pan; bake in two batches if necessary. Salmon continues to cook after removal from the oven, so pull it when slightly translucent in the center. Store leftovers separately from the mayo to prevent oil separation.
