  • 3/4 cup (150 grams) granulated white sugar
  • 1 large egg, room temperature
  • 2 cups (250 grams) all-purpose flour
  • 1/2 teaspoon (2 grams) baking powder
  • 1/2 teaspoon (3 grams) salt
  • 1 teaspoon (5 ml) vanilla extract
  • Food coloring (gel or liquid, brown and white)
  • 1 cup (200 grams) white frosting (homemade or store-bought) for laces

Instructions

  1. In a large mixing bowl, cream the softened butter and granulated sugar together on medium speed for 2-3 minutes (or 5 minutes by hand) until pale and fluffy.
  2. Add the egg and vanilla extract, beating on medium speed for another minute until fully combined and smooth. Scrape down the sides of the bowl.
  3. Add the flour, baking powder, and salt. Mix on low speed or stir gently just until the flour disappears. Do not overmix.
  4. Wrap the dough in plastic wrap or place in a covered bowl and refrigerate for at least 30 minutes to solidify the butter.
  5. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  6. Divide the chilled dough in half. Roll one half out on a lightly floured surface to 1/4-inch thickness. Cut out football shapes using a cookie cutter and place on baking sheets, leaving 1 inch between them.
  7. Bake for 10-12 minutes until edges are lightly golden but centers still look slightly soft.
  8. Let cookies cool on the pan for 5 minutes, then transfer to a wire rack to cool completely.
  9. Once cool, frost with white icing and draw laces using a toothpick or piping bag.

Notes

Do not substitute brown sugar as it makes the cookies too chewy and they won’t hold the shape. Ensure butter is softened but not melted. Chill the dough thoroughly to prevent spreading. For even baking, weigh dough pieces to approximately 25 grams. Cookies can be frozen for up to 3 months.
