Description

A single-serving, budget-friendly breakfast bake that transforms leftover croissants, ham, and cheese into a comforting, custard-like meal for under $3.


Ingredients

  • 1 large croissant (approx. 100g / 3.5 oz), day-old
  • 2 large eggs (100g total weight)
  • 1/4 cup milk (60ml)
  • 2 slices ham (approx. 30g / 1 oz), chopped
  • 1/4 cup shredded cheddar cheese (approx. 25g)
  • 1/4 teaspoon salt (optional, based on ham saltiness)
  • 1/8 teaspoon black pepper
  • 1 teaspoon butter (for greasing ramekin)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 6-8 oz ramekin with butter.
  2. Tear the day-old croissant into bite-sized pieces and place them into the prepared ramekin, pressing down gently.
  3. In a small bowl, whisk together eggs, milk, salt, and pepper until fully combined.
  4. Pour the egg mixture evenly over the croissant pieces. Press down gently to help absorption and let sit for 2-3 minutes.
  5. Sprinkle chopped ham and shredded cheese over the top of the soaked bread.
  6. Place ramekin on a baking sheet and bake for 20-25 minutes until golden brown and set.
  7. Let cool for 2 minutes before eating.

Notes

Use day-old croissants for best texture as they absorb the egg mixture without turning to mush. Taste the ham before adding salt, as deli ham can be very salty. Do not freeze leftovers as the custard texture becomes rubbery upon thawing. Can be prepped the night before and refrigerated overnight.
