  • 3 cups (270g) old-fashioned rolled oats
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 ½ teaspoons ground cinnamon
  • 1 ½ cups (225g) raisins
  • Optional: ½ cup chocolate chips, chopped walnuts, or dried cranberries

Instructions

  1. Preheat oven to 350°F (175°C). Line two large baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, salt, and cinnamon. Set aside.
  3. In a large bowl, beat the softened butter, brown sugar, and white sugar on medium-high speed for 3 minutes until light and fluffy.
  4. Add eggs one at a time, beating well after each addition. Scrape down the sides of the bowl. Add vanilla and mix until combined.
  5. Reduce mixer speed to low. Gradually add the dry ingredient mixture to the butter mixture. Mix just until the flour disappears; do not overmix.
  6. Switch to a silicone spatula and fold in the rolled oats and raisins until incorporated.
  7. Cover the bowl with plastic wrap and refrigerate the dough for at least 30 minutes (up to 2 hours) to chill.
