  • 3 cups (270g) Old-Fashioned Rolled Oats
  • 2 large ripe Bananas (~1 cup mashed)
  • 1 cup (245g) Plain Greek Yogurt (2% recommended)
  • 2 large Eggs
  • 1.5 cups (360ml) Almond Milk or Milk
  • 2 tsp Vanilla Extract
  • 1/2 cup (85g) Dark or Semi-Sweet Chocolate Chips
  • 1 tsp Baking Powder
  • 1 pinch Salt
  • Optional: 1 tbsp Maple Syrup for extra sweetness

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×9 inch baking dish with butter or cooking spray; lining with parchment paper is optional but helpful for removal.
  2. In a large mixing bowl, thoroughly mash the ripe bananas until smooth with no large lumps.
  3. Add the Greek yogurt, eggs, vanilla extract, and milk to the mashed bananas. Whisk until the mixture is smooth and resembles a thick, pale yellow batter.
  4. Add the rolled oats, baking powder, and a pinch of salt to the wet mixture. Stir until oats are fully coated.
  5. Let the mixture sit for 5 minutes to allow the oats to absorb the liquid.
  6. Fold in the chocolate chips, reserving about 2 tablespoons to sprinkle on top later.
  7. Pour the batter into the prepared baking dish and sprinkle the reserved chocolate chips on top.
  8. Bake for 35-40 minutes until the top is golden brown and edges pull slightly away from the pan. A toothpick inserted in the center should come out with moist crumbs.
  9. Let the oatmeal cool in the pan for at least 20 minutes to set before slicing into 9 or 12 squares.

Notes

Do not use instant or steel-cut oats as they affect texture. Let the oatmeal cool completely before storing to prevent sogginess. When reheating, add a splash of milk or water to maintain moisture. Can be frozen for up to 3 months.
