Ingredients

  • 3 large or 4 medium English or hothouse cucumbers (about 1.5 kg)
  • 1/2 medium yellow onion (about 75g)
  • 1/2 cup packed fresh dill (about 15g)
  • 1/2 cup full-fat sour cream (120g)
  • 1/4 cup mayonnaise (60g)
  • 2 tablespoons white vinegar (30ml)
  • 1 teaspoon sugar (5g)
  • 1 teaspoon kosher salt (6g)
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 cup ice water (120ml)

Instructions

  1. Wash cucumbers. If using standard slicing cucumbers, peel them. Slice cucumbers into long, thin ribbons or thin diagonal slices.
  2. Place sliced cucumbers in a large colander. Sprinkle with salt and toss to coat. Let sit for 30 minutes to draw out moisture.
  3. Rinse cucumbers under cold water to remove excess salt. Squeeze firmly by hand to remove as much water as possible.
  4. In a small bowl, whisk together sour cream, mayonnaise, white vinegar, sugar, and black pepper until smooth.
  5. Finely chop the fresh dill and dice the yellow onion very finely.
  6. In a large mixing bowl, combine the drained cucumbers, chopped dill, and diced onion. Pour the dressing over the top and toss gently to coat evenly.
  7. Cover and refrigerate for at least 30 minutes (or up to 4 hours) to allow flavors to meld.
  8. Serve cold.

Notes

This salad improves with time. For best results, squeeze the cucumbers thoroughly after rinsing to prevent a watery salad. Use fresh dill only, as dried dill lacks the necessary brightness. If using standard cucumbers, peeling is recommended. The salad can be made up to 24 hours in advance; add fresh dill just before serving to maintain color.
