Description
A convenient and flavorful meal prep recipe featuring seared pork chops in a rich, stable garlic and parmesan cream sauce, designed to stay moist and delicious for up to four days.
Ingredients
Scale
- 4 pork chops (approx. 1.5 lbs / 680g), bone-in center-cut preferred
- 1 cup heavy cream (240ml)
- 6 cloves garlic, minced
- 1 cup freshly grated parmesan cheese (100g)
- 1/2 cup chicken broth (120ml), low-sodium
- 2 tbsp butter
- 1 tsp Dijon mustard
- Salt and black pepper, to taste
- Pinch of paprika
Instructions
- Pat pork chops dry and season both sides generously with salt, black pepper, and a pinch of paprika.
- Heat a large skillet over medium-high heat and add butter. Once foaming, sear pork chops for 3-4 minutes per side until golden brown, removing them when they reach 140°F internal temperature.
- Reduce heat to medium. Add minced garlic to the pan and sauté for 30 seconds until fragrant.
- Add chicken broth and Dijon mustard, scraping the bottom of the pan to release browned bits. Simmer for 1 minute.
- Pour in heavy cream and stir constantly. Simmer gently for 2-3 minutes until it coats the back of a spoon.
- Stir in parmesan cheese until melted and smooth. Taste and adjust salt if needed.
- Return pork chops to the pan, nestling them into the sauce. Let sit for 2 minutes to finish cooking to 145°F.
- Cool completely in the pan for 20 minutes before portioning into containers to prevent condensation.
- Divide into 4 containers with one chop and sauce per container. Refrigerate immediately.
Notes
Do not overcook the pork in the skillet as it will finish cooking in the sauce and during reheating. For best results, use bone-in chops. If reheating, add a splash of water or broth to re-emulsify the sauce. Store in the refrigerator for up to 4 days or freeze for up to 3 months.
