  • 1 medium yellow onion, finely diced
  • 3 cloves garlic, minced
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 1 cup beef broth (low-sodium)
  • 1 teaspoon Dijon mustard
  • 1 tablespoon Worcestershire sauce
  • 1 cup full-fat plain sour cream
  • 8 ounces egg noodles
  • Salt and black pepper to taste
  • 1 cup frozen peas (optional)

Instructions

  1. Boil water for the egg noodles, salt generously, and cook according to package directions until al dente. Drain and toss with a tiny bit of butter to prevent sticking.
  2. While noodles cook, heat butter in a large skillet over medium-high heat. Add diced onion and cook for 2 minutes until soft.
  3. Add ground beef to the skillet, breaking it up with a spoon. Cook until browned (5-6 minutes). Drain excess fat if necessary, leaving some for flavor. Season with salt and pepper.
  4. Reduce heat to medium. Sprinkle flour over the beef and onion mixture. Stir constantly for 1-2 minutes to cook out the raw flour taste.
  5. Slowly pour in beef broth, whisking constantly to prevent lumps. Add Dijon mustard and Worcestershire sauce. Simmer for 2-3 minutes until the sauce thickens slightly.
  6. Remove the skillet from the heat and let it cool for 30 seconds. Stir in sour cream gradually to prevent curdling. Taste and adjust seasoning.
  7. Add the drained egg noodles to the skillet. Toss everything together until noodles are coated in the creamy sauce. If using peas, stir them in now to heat through.
  8. Serve immediately with fresh parsley or chives if desired.

Notes

Ensure sour cream is at room temperature before adding to prevent curdling. Always remove the pan from the heat before stirring in the dairy. If the sauce is too thick, add a splash of starchy pasta water. This recipe does not freeze well due to the dairy content.
