Description

A plant-based, crispy alternative to chicken wings featuring a shatteringly crisp almond flour batter and a tangy, emulsified buffalo sauce. Perfect for game day and naturally gluten-free.

  • 1 large head medium cauliflower (approx. 2.5 lbs / 1.1 kg), cut into 1-inch florets
  • 1/2 cup (60g) almond flour
  • 2 tbsp (15g) cornstarch
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1 tsp salt
  • 2g black pepper
  • 1/3 cup (80ml) cold sparkling water or seltzer
  • 1/2 cup (120ml) Frank’s RedHot Sauce
  • 4 tbsp (57g) unsalted butter
  • 1 tsp apple cider vinegar
  • 1/2 tsp Worcestershire sauce

Instructions

  1. Preheat oven to 425°F (220°C). Line a large rimmed baking sheet with parchment paper.
  2. Pat cauliflower florets dry with a paper towel to remove excess moisture.
  3. In a bowl, whisk together almond flour, cornstarch, garlic powder, smoked paprika, salt, and pepper.
  4. In a separate container, mix cold sparkling water with a pinch of salt.
  5. Pour wet ingredients into dry ingredients and stir until a thick batter forms.
  6. Toss cauliflower florets in the batter until evenly coated.
  7. Arrange coated florets on the baking sheet, ensuring they do not touch.
  8. Bake for 20-25 minutes, flipping halfway through, until golden brown and tender.
  9. While cauliflower bakes, melt butter in a small saucepan over low heat.
  10. Whisk in Frank’s RedHot, apple cider vinegar, and Worcestershire sauce. Simmer for 1-2 minutes.
  11. Remove cauliflower from oven and immediately toss in a large bowl with the warm buffalo sauce.
  12. Serve immediately while still crunchy.

Notes

Do not overcrowd the pan to ensure crispiness. Pat cauliflower dry before battering. Toss with sauce immediately while hot for best adherence. For extra crunch, double dip in batter. Can be made vegan by using vegan butter.
