  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1 cup panko breadcrumbs
  • 0.5 cup freshly grated Parmesan cheese
  • 2 large eggs, whisked
  • 2 teaspoons garlic powder
  • 1 teaspoon Italian seasoning
  • 2 tablespoons butter, melted
  • 2 tablespoons fresh parsley, chopped
  • 0.5 cup all-purpose flour (for dredging)
  • Salt and pepper (for seasoning flour)

Instructions

  1. Preheat oven to 400°F (200°C). Soak bamboo skewers in water for at least 30 minutes.
  2. Pat chicken cubes dry with paper towels to ensure coating adhesion.
  3. Set up a dredging station with three shallow bowls: one with flour seasoned with salt and pepper, one with beaten eggs, and one with panko, parmesan, garlic powder, and Italian seasoning mixed together.
  4. Dredge chicken cubes in flour, shaking off excess, then dip in egg wash, and finally press firmly into the panko mixture to coat evenly.
  5. Place coated chicken on a plate and let rest for 10-15 minutes to help the coating set.
  6. Thread chicken cubes onto soaked skewers, leaving small spaces between pieces.
  7. Place skewers on a wire rack set over a baking sheet.
  8. Brush the tops of the skewers with melted butter.
  9. Bake for 15-18 minutes, flipping halfway through and brushing the other side with butter, until internal temperature reaches 165°F (74°C) and coating is golden brown.
  10. Remove from oven, let rest for 2 minutes, sprinkle with fresh parsley, and serve immediately.

Notes

Soak bamboo skewers to prevent burning. Use a wire rack to ensure even crispiness on all sides. Do not overcrowd the pan to avoid steaming. For a dairy-free option, substitute parmesan with nutritional yeast and butter with olive oil. For gluten-free, use gluten-free panko and flour.
