Instructions
- Preheat oven to 400°F (200°C) and line a 18×13 inch baking sheet with parchment paper.
- Pat chicken thighs dry with paper towels to ensure crispiness.
- Place chicken in a large bowl, drizzle with olive oil, and sprinkle with garlic powder, salt, and black pepper. Toss to coat evenly.
- In a separate small bowl, mix grated Parmesan cheese, minced garlic, dried oregano, and a pinch of black pepper.
- Press each chicken thigh firmly into the Parmesan mixture, coating all sides, especially the top.
- Place coated thighs on the prepared baking sheet, leaving about an inch of space between each piece.
- Bake for 25-30 minutes without opening the oven door for the first 15 minutes.
- Check that internal temperature reaches 165°F (74°C). If needed, broil for 1-2 minutes for extra browning.
- Remove from oven and let rest for 5 minutes before serving.
- Sprinkle with fresh parsley and red pepper flakes if desired.
