Crispy Oven-Baked Chicken Thighs: 5-Ingredient Garlic Parmesan Dinner

  • Author: Nadia
  • Total Time: 40 minutes
  • Yield: 4 servings 1x

Description

A simple, family-friendly dinner featuring boneless chicken thighs coated in a crunchy garlic and Parmesan crust, baked until golden and juicy with minimal effort.

Ingredients

Scale
  • 2 pounds boneless, skin-on chicken thighs
  • 3 tablespoons extra virgin olive oil
  • 1 teaspoon garlic powder
  • 4 cloves fresh garlic, minced
  • 1 cup freshly grated Parmesan cheese
  • 1 teaspoon dried oregano
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • Optional: 1/4 teaspoon red pepper flakes
  • Optional: 2 tablespoons fresh parsley, chopped

Instructions

  1. Preheat oven to 400°F (200°C) and line a 18×13 inch baking sheet with parchment paper.
  2. Pat chicken thighs dry with paper towels to ensure crispiness.
  3. Place chicken in a large bowl, drizzle with olive oil, and sprinkle with garlic powder, salt, and black pepper. Toss to coat evenly.
  4. In a separate small bowl, mix grated Parmesan cheese, minced garlic, dried oregano, and a pinch of black pepper.
  5. Press each chicken thigh firmly into the Parmesan mixture, coating all sides, especially the top.
  6. Place coated thighs on the prepared baking sheet, leaving about an inch of space between each piece.
  7. Bake for 25-30 minutes without opening the oven door for the first 15 minutes.
  8. Check that internal temperature reaches 165°F (74°C). If needed, broil for 1-2 minutes for extra browning.
  9. Remove from oven and let rest for 5 minutes before serving.
  10. Sprinkle with fresh parsley and red pepper flakes if desired.

Notes

Patting the chicken dry is crucial for a crispy crust. Use freshly grated Parmesan rather than pre-grated to avoid anti-caking agents that prevent melting. Do not overcrowd the pan to ensure proper airflow. Chicken thighs are more forgiving than breasts and stay juicier.
