Description

An easy, naturally gluten-free holiday platter featuring prosciutto, sharp cheddar, brie, honeycomb, and homemade spiced nuts. This make-ahead appetizer requires zero cooking for the main assembly and offers a perfect balance of salty, sweet, and crunchy flavors.


Ingredients

  • 150g Prosciutto di Parma
  • 200g Sharp Cheddar Cheese (sliced into triangles or cubes)
  • 200g Soft Brie or Camembert (sliced into wedges or quarters)
  • 150g Raw Honeycomb
  • 1 cup Raw Pecans
  • 1 cup Raw Walnuts
  • 1 tbsp Maple Syrup
  • 1 tsp Cinnamon
  • Pinch of Cayenne Pepper
  • Pinch of Sea Salt
  • 250g Fresh Grapes (Red or Green)
  • 100g Green Olives (Castelvetrano or pitted)
  • 1 pack Gluten-Free Crackers (approx. 200g)
  • 100g Dried Figs and Apricots
  • 1 large Honeycrisp Apple (sliced, tossed with lemon juice)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a small bowl, mix raw pecans and walnuts with maple syrup, cinnamon, cayenne pepper, and sea salt until coated.
  3. Spread nuts in a single layer on a baking sheet or skillet and bake for 8-10 minutes, stirring halfway through, until toasted and slightly darker.
  4. Let nuts cool completely on the pan to ensure they stay crunchy.
  5. Slice cheddar into thin triangles or cubes and cut Brie into wedges or quarters.
  6. Arrange cheeses on the board first to anchor the layout.
  7. Fold prosciutto loosely into nests or rolls and tuck them around the cheeses.
  8. Scatter cooled spiced nuts in gaps or place in small bowls for height.
  9. Tuck dried figs and apricots near the cheddar.
  10. Fan out apple slices around the board.
  11. Place grapes in clusters and olives in a small bowl.
  12. Place honeycomb chunks near the Brie.
  13. Lean gluten-free crackers against cheeses or lay them flat in remaining spaces.

Notes

Take cheese out of the fridge 30 minutes before serving for better flavor. Keep the board away from direct heat to prevent honeycomb from melting. If apples brown, toss them in lemon juice. The board can be assembled up to 4 hours in advance and covered with plastic wrap.
