Description

Tender, juicy pork ribs cooked slowly in a slow cooker with a homemade dry rub and tangy BBQ sauce. This easy weeknight dinner requires minimal effort and delivers restaurant-quality flavor.

  • 2 racks Pork Baby Back Ribs (about 45 lbs)
  • 1 large Yellow Onion, sliced
  • ½ cup Chicken Broth (low-sodium)
  • 1 tablespoon Smoked Paprika
  • 2 tablespoons Brown Sugar
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
  • 1 teaspoon Dried Oregano
  • 1 teaspoon Black Pepper (freshly cracked)
  • 1 teaspoon Kosher Salt
  • ½ teaspoon Cayenne Pepper (optional)
  • 1 ½ cups BBQ Sauce
  • 1 tablespoon Apple Cider Vinegar
  • 1 teaspoon Worcestershire Sauce
  • 1 teaspoon Hot Sauce (optional)
  • 1 tablespoon Butter (optional)

Instructions

  1. Remove ribs from packaging and pat dry. Peel off the silver skin membrane from the back of the ribs if present.
  2. In a small bowl, mix smoked paprika, brown sugar, garlic powder, onion powder, oregano, black pepper, salt, and cayenne to create the dry rub.
  3. Generously rub the spice mixture all over the ribs, both sides. Let sit for 15 minutes if time permits.
  4. Slice the yellow onion into thin rounds and spread them across the bottom of the slow cooker. Place ribs on top of the onions.
  5. Pour chicken broth over the onions in the bottom of the pot.
  6. Cover and cook on LOW for 6-8 hours (or HIGH for 4-5 hours) until meat is tender and pulls back from the bone.
  7. In a bowl, mix BBQ sauce, apple cider vinegar, Worcestershire sauce, and hot sauce.
  8. Carefully pour off excess liquid from the pot. Brush the sauce mixture generously over the ribs.
  9. Cover and cook on HIGH for 30 minutes to allow the sauce to set and caramelize.
  10. Remove ribs from the pot, cut into individual ribs, and serve immediately with extra sauce drizzled on top.

Notes

If your slow cooker is small, cook in batches to avoid overcrowding. For a crispier exterior, broil the sauced ribs for 2-3 minutes. The liquid left in the pot can be strained and used as a gravy base. Leftovers keep well in the fridge for up to 3 days or can be frozen for up to 3 months.
