Ingredients

  • 1 tablespoon water or milk
  • 1/2 teaspoon salt
  • 1 small onion, finely diced
  • 12 green chilies, finely chopped
  • 1 teaspoon fresh ginger, grated
  • 1 clove garlic, minced
  • 1/4 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder
  • 2 tablespoons fresh cilantro, chopped
  • 1 tablespoon butter or oil

Instructions

  1. Dice the onion, mince the garlic, grate the ginger, and chop the chilies. Place them in a small bowl.
  2. Add turmeric, red chili powder, and chopped cilantro to the spice bowl. Mix well to combine.
  3. Crack the eggs into a medium bowl. Add salt and water (or milk).
  4. Whisk the eggs vigorously for 30-60 seconds until pale and frothy.
  5. Pour the masala spice mix into the whisked eggs and stir gently to combine.
  6. Heat a non-stick skillet over medium heat. Add butter or oil and wait until it shimmers.
  7. Pour the egg mixture into the center of the pan. Use a spatula to push edges toward the center, tilting the pan to let uncooked egg flow into empty spaces for about 30 seconds.
  8. Stop moving the eggs and let them set for another minute until the bottom is golden and the top is mostly set but slightly runny.
  9. Fold the omelette in half and slide it onto a plate. Serve immediately.

Notes

Do not overcook the omelette; it should be slightly jiggly in the middle when removed from heat as it will continue to cook from residual heat. Use fresh herbs for best flavor. If using table salt, reduce the amount slightly compared to kosher salt. For a dairy-free version, use oil instead of butter and water instead of milk.
