  • 1/2 cup unsalted butter
  • 6 cloves garlic, minced
  • 1/2 teaspoon red pepper flakes
  • 1 large lemon (juice of half for marinade, wedges for serving)
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons fresh parsley, chopped
  • Kosher salt and freshly cracked black pepper
  • Skewers (wooden or metal)

Instructions

  1. Thaw frozen shrimp if using by soaking in cold water for 15 minutes or refrigerating overnight. Pat shrimp completely dry with paper towels.
  2. In a medium bowl, toss shrimp with olive oil, half the lemon juice, salt, and pepper. Let sit for 5-10 minutes.
  3. If using wooden skewers, soak them in water for 30 minutes. Thread shrimp onto skewers, placing two per skewer with tails on the outside.
  4. Melt butter in a small saucepan over low heat. Add minced garlic and red pepper flakes. Stir constantly for 1 minute until fragrant but not brown. Remove from heat and stir in chopped parsley.
  5. Preheat grill to medium-high heat (approx. 400°F) and oil the grates.
  6. Grill skewers for 2-3 minutes on the first side until grill marks appear and shrimp turn pink. Flip, brush generously with garlic butter sauce, and cook for another 2-3 minutes, basting again halfway through.
  7. Remove shrimp when pink, opaque, and slightly curled. Serve immediately with lemon wedges and remaining sauce.

Notes

Do not overcook shrimp as they become rubbery. Ensure shrimp are dry before grilling to prevent steaming. If using wooden skewers, soaking them prevents burning. For a dairy-free version, swap butter for olive oil or dairy-free alternative.
