  • 1 tablespoon granulated sugar
  • 1 teaspoon Dijon mustard
  • ½ medium white onion, thinly sliced
  • 3 tablespoons fresh dill, finely chopped
  • Pinch of black or white pepper

Instructions

  1. Wash cucumbers and slice them into uniform rounds or half-moons, about ¼ inch thick.
  2. Place cucumber slices in a colander set over a bowl or in the sink. Sprinkle evenly with 1 teaspoon of salt and toss to coat.
  3. Let the cucumbers sit for 30 minutes to draw out excess moisture.
  4. Rinse the cucumbers thoroughly under cold water to remove excess salt.
  5. Gently squeeze the cucumbers with your hands or pat them dry with paper towels until damp but not dripping.
  6. In a small bowl, whisk together sour cream, mayonnaise, white vinegar, sugar, Dijon mustard, and a pinch of pepper until smooth and the sugar is dissolved.
  7. Transfer the dried cucumber slices to a large serving bowl and add the thinly sliced white onion.
  8. Pour the dressing over the cucumbers and onion, tossing gently to coat evenly.
  9. Cover the bowl and refrigerate for at least 30 minutes (up to 4 hours) to allow flavors to meld.
  10. Just before serving, sprinkle with finely chopped fresh dill and give a gentle toss. Serve cold.
