  • 4 salmon fillets (about 6 ounces each)
  • 1/2 cup unsalted butter, softened
  • 4 cloves fresh garlic, minced
  • 2 tablespoons fresh dill, chopped
  • 1 tablespoon fresh parsley, chopped
  • 2 lemons (1 sliced, 1 juiced)
  • 1 tablespoon olive oil
  • Kosher salt and freshly cracked black pepper
  • Optional: 1 bunch asparagus spears, trimmed
  • Optional: 1/2 small red onion, thinly sliced
  • Optional: 1 cup cherry tomatoes, halved
  • Optional: 2 small shallots, minced

Instructions

  1. In a small bowl, mix softened butter, minced garlic, chopped dill, chopped parsley, 1 tablespoon lemon juice, and a pinch of salt and pepper until combined into a paste.
  2. Rinse salmon fillets and pat dry with paper towels. Season both sides generously with salt and pepper.
  3. Cut four large sheets of heavy-duty aluminum foil, each about 18 inches long.
  4. Place salmon fillets in the center of each foil sheet. If using veggies, place them on the bottom first, then top with salmon.
  5. Top each fillet with lemon slices and a generous dollop (1-2 tablespoons) of the herb butter.
  6. Fold the long sides of the foil over the salmon, sealing tightly. Fold the short ends up and seal tightly to create a leak-proof packet.
  7. Preheat grill to medium-high heat (400°F / 200°C). Lightly oil the grates.
  8. Place packets on the grill, close the lid, and cook for 12-15 minutes without opening.
  9. Check for doneness: salmon should be opaque and flake easily. Internal temperature should reach 145°F.
  10. Remove from grill and let rest for 2-3 minutes before carefully opening and serving.

Notes

Use heavy-duty foil to prevent leaking. Pat salmon dry before seasoning to ensure butter adheres. Do not overcook; salmon continues to cook after removal from heat. Can be baked in oven at 400°F for 15-20 minutes if grilling is not an option.
