- 1 pound wide egg noodles
- 1 large yellow onion, diced
- 4 cloves garlic, minced
- 2 tablespoons butter
- 2 tablespoons sweet Hungarian paprika
- 2 tablespoons tomato paste
- 2 cups low-sodium beef broth
- 1/2 cup heavy cream
- 2 tablespoons ketchup
- 1 teaspoon dried parsley
- 1 teaspoon salt (or to taste)
- 1/2 teaspoon black pepper (or to taste)
- 1 cup frozen peas (optional)
Instructions
- Prep ingredients: Chop onion, mince garlic, and measure spices.
- Brown the beef in a large pot over medium-high heat for 5-7 minutes until no longer pink. Drain excess fat, leaving about 1 tablespoon.
- Reduce heat to medium. Add butter to the pot. Once melted, add diced onion and cook for 3-4 minutes until soft. Add garlic and cook for 1 minute.
- Add paprika to the pot and stir into the beef and onions for 30 seconds to bloom the flavor.
- Stir in tomato paste and ketchup, cooking for 1 minute. Pour in beef broth and add dried parsley. Stir to scrape up browned bits and bring to a simmer.
- Add egg noodles to the pot, ensuring they are submerged. Cover and simmer on low-medium heat for 10-12 minutes, stirring occasionally, until noodles are tender.
- Remove from heat. Stir in heavy cream. Taste and adjust salt and pepper. If too thick, add a splash of water or broth.
- Serve immediately, optionally topped with fresh parsley and served with garlic bread or a green salad.
Notes
Do not overcook the noodles as they will continue to cook in the sauce. Bloom the paprika in fat for best flavor. Drain most beef fat to avoid greasiness. Use low-sodium broth to control saltiness. This dish does not freeze well due to the dairy; store in fridge for up to 4 days. Reheat with a splash of milk or cream to restore creaminess.
