  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 2 tablespoons taco seasoning
  • 1 cup tomato sauce
  • 1 can (15oz) black beans, drained and rinsed
  • 1 cup corn (frozen or canned)
  • 2 cups shredded cheddar cheese
  • Optional: Jalapeños, green onions, salsa, sour cream

Instructions

  1. Prep ingredients by dicing onion, mincing garlic, draining beans, and grating cheese.
  2. Heat a large skillet over medium-high heat. Add ground beef and break it up with a wooden spoon. Cook until browned (5-7 minutes). Drain most fat, leaving about 1-2 tablespoons.
  3. Add diced onion to the beef and cook for 2-3 minutes until softened. Add minced garlic and cook for 1 minute until fragrant.
  4. Stir in taco seasoning, tomato sauce, black beans, and corn. Simmer for 3-4 minutes until the sauce thickens slightly.
  5. Remove skillet from heat. Sprinkle shredded cheddar cheese evenly over the top. Cover with a lid or foil for 1-2 minutes until cheese is melted.
  6. Serve immediately with desired toppings like sour cream, salsa, or green onions.

Notes

Do not drain all the fat from the beef to maintain juiciness. Shred your own cheese for better melting. If the mixture is too watery, simmer longer. This recipe is naturally gluten-free, but check seasoning labels. It does not freeze well due to the cheese.
