  • 2 pounds boneless, skinless chicken thighs (or bone-in, skin-on)
  • 2 tablespoons avocado oil or vegetable oil
  • Kosher salt and freshly cracked black pepper
  • 68 cloves garlic, minced
  • 1/2 cup honey
  • 1/4 cup soy sauce (or tamari for gluten-free)
  • 2 tablespoons rice vinegar
  • 1 teaspoon toasted sesame oil
  • 1/2 teaspoon red pepper flakes (optional)
  • 45 stalks green onions, thinly sliced
  • 1 tablespoon toasted sesame seeds

Instructions

  1. Pat chicken thighs dry with paper towels and season generously with salt and pepper.
  2. In a small bowl, whisk together honey, soy sauce, rice vinegar, minced garlic, sesame oil, and red pepper flakes until combined.
  3. Heat oil in a large skillet over medium-high heat. Sear chicken thighs for 5-6 minutes on one side until golden brown and crispy, then flip and cook for another 4-5 minutes until internal temperature reaches 165°F. Remove chicken from pan and set aside.
  4. Reduce heat to medium. Pour the honey-garlic sauce mixture into the same skillet, scraping up browned bits from the bottom. Simmer for 2-3 minutes until slightly thickened.
  5. Add sliced green onions to the bubbling sauce and cook for 1 minute until wilted and slightly charred.
  6. Return chicken to the skillet, spooning sauce over the top. Cook for 1-2 minutes to glaze the chicken.
  7. Serve immediately over rice or noodles, garnished with sesame seeds and extra green onions.

Notes

Do not skip searing the chicken for texture. Keep heat at medium or lower when adding the sauce to prevent the honey from burning. Use fresh garlic for best flavor. If using bone-in chicken, sear for a longer time. Do not freeze leftovers as texture may suffer.
