Ingredients

  • 1 lb (450g) ground beef (80/20 blend)
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 2 tbsp tomato paste
  • 1/2 cup (120ml) ketchup
  • 1 tbsp brown sugar
  • 1 tsp Worcestershire sauce
  • 1 tsp apple cider vinegar
  • 4 large brioche buns
  • 2 tbsp butter (for toasting)

Instructions

  1. Dice the onion and mince the garlic. Measure out sauces and have them ready.
  2. Heat a large skillet over medium-high heat. Add ground beef and break it up into small pieces with a wooden spoon.
  3. Cook beef for 5-6 minutes until browned and no longer pink. Drain excessive grease, leaving about 1 tablespoon.
  4. Add diced onion to the beef and cook for 2-3 minutes until softened and translucent.
  5. Stir in garlic and cook for 30 seconds until fragrant.
  6. Add tomato paste, ketchup, brown sugar, Worcestershire sauce, and apple cider vinegar. Stir to coat the meat evenly.
  7. Simmer the mixture for 2-3 minutes until the sauce thickens and becomes glossy. Season with salt and pepper to taste.
  8. While the meat simmers, cut brioche buns in half and brush cut sides generously with butter.
  9. Toast buns butter-side down in a skillet or grill pan over medium heat for 1-2 minutes until golden and crisp.
  10. Assemble by placing a generous scoop of the sloppy joe mixture onto the bottom half of each bun and topping with the top half.
  11. Serve immediately while warm.

Notes

Use 80/20 ground beef for juiciness; lean beef will result in a dry texture. Toast the buns thoroughly to prevent sogginess. The meat mixture can be made up to 3 days in advance and reheated. For extra richness, add cheddar or American cheese on top.
