  • 4 large bell peppers, assorted colors (sliced into ½ inch strips)
  • 2 large yellow onions (sliced into half-moon rings)
  • 6 cloves garlic, minced
  • 3 tablespoons extra virgin olive oil
  • 2 teaspoons dried oregano
  • ½ teaspoon red pepper flakes
  • 1 teaspoon kosher salt (adjust to taste)
  • ½ teaspoon cracked black pepper
  • ¼ cup fresh basil, chopped (for garnish)
  • 1 tablespoon red wine vinegar (optional, for serving)
  • ½ cup feta cheese, crumbled (optional, for serving)

Instructions

  1. Preheat oven to 400°F.
  2. Slice peppers into ½ inch strips, onions into half-moon rings, and sausage into 1-inch diagonal pieces.
  3. Place all ingredients in a large bowl.
  4. Drizzle with olive oil and sprinkle with oregano, red pepper flakes, salt, and black pepper. Toss until evenly coated.
  5. Spread ingredients in a single layer on a large sheet pan (do not crowd the pan).
  6. Bake for 25-30 minutes, stirring halfway through, until sausage is browned and peppers are tender.
  7. Remove from oven and sprinkle with fresh basil.
  8. Drizzle with red wine vinegar if desired and serve immediately with crusty bread.

Notes

Do not crowd the pan or the vegetables will steam instead of roast. If feeding a large group, use multiple pans. Sausage should reach an internal temperature of 160°F. For extra crispy edges, use 4 tablespoons of oil. Let the dish rest for 5 minutes before serving to allow flavors to meld.
