- 4 large bell peppers, assorted colors (sliced into ½ inch strips)
- 2 large yellow onions (sliced into half-moon rings)
- 6 cloves garlic, minced
- 3 tablespoons extra virgin olive oil
- 2 teaspoons dried oregano
- ½ teaspoon red pepper flakes
- 1 teaspoon kosher salt (adjust to taste)
- ½ teaspoon cracked black pepper
- ¼ cup fresh basil, chopped (for garnish)
- 1 tablespoon red wine vinegar (optional, for serving)
- ½ cup feta cheese, crumbled (optional, for serving)
Instructions
- Preheat oven to 400°F.
- Slice peppers into ½ inch strips, onions into half-moon rings, and sausage into 1-inch diagonal pieces.
- Place all ingredients in a large bowl.
- Drizzle with olive oil and sprinkle with oregano, red pepper flakes, salt, and black pepper. Toss until evenly coated.
- Spread ingredients in a single layer on a large sheet pan (do not crowd the pan).
- Bake for 25-30 minutes, stirring halfway through, until sausage is browned and peppers are tender.
- Remove from oven and sprinkle with fresh basil.
- Drizzle with red wine vinegar if desired and serve immediately with crusty bread.
Notes
Do not crowd the pan or the vegetables will steam instead of roast. If feeding a large group, use multiple pans. Sausage should reach an internal temperature of 160°F. For extra crispy edges, use 4 tablespoons of oil. Let the dish rest for 5 minutes before serving to allow flavors to meld.
