  • 1 pound ground turkey (93% lean)
  • 4 stalks green onions, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 can water chestnuts, drained and chopped
  • 3 tablespoons soy sauce (or tamari for gluten-free)
  • 1 tablespoon toasted sesame oil
  • 1 tablespoon honey
  • 1 teaspoon rice vinegar
  • 1/2 teaspoon red pepper flakes
  • 2 heads iceberg lettuce
  • 1 medium carrot, julienned
  • 1/2 cup fresh cilantro, chopped
  • 1 tablespoon sesame seeds, toasted

Instructions

  1. Prep ingredients: Chop green onions, mince garlic, grate ginger, and drain/chop water chestnuts. Mix sauce ingredients (soy sauce, sesame oil, honey, rice vinegar, red pepper flakes) in a small bowl and set aside.
  2. Heat a large skillet or wok over medium-high heat. Add ground turkey, breaking it up with a wooden spoon. Cook for 5-7 minutes until browned and no longer pink. Drain excess grease if necessary.
  3. Push turkey to one side of the pan. Add garlic and ginger to the empty space and cook for 30 seconds until fragrant. Stir to combine with turkey.
  4. Add the white parts of the green onions and chopped water chestnuts to the pan. Stir for 1 minute.
  5. Pour the sesame sauce mixture over the turkey. Stir to coat evenly and simmer for 1-2 minutes until the sauce thickens slightly. Taste and adjust seasoning if needed.
  6. While turkey cooks, separate iceberg lettuce leaves, wash, and dry them thoroughly. Arrange leaves on a platter.
  7. Spoon the warm turkey mixture into the lettuce cups. Top with julienned carrots, cilantro, and toasted sesame seeds. Serve immediately.
