Mediterranean Shrimp Skillet: 30-Minute Healthy Weeknight Dinner

  • Author: Nadia
  • Total Time: 30 minutes
  • Yield: 4 servings 1x

Description

A vibrant, one-pan Mediterranean shrimp skillet with cherry tomatoes, Kalamata olives, and lemon. This healthy, low-carb dinner is ready in 30 minutes and perfect for busy weeknights.

Ingredients

Scale
  • 1.5 lbs large or extra-large shrimp, peeled and deveined
  • 3 tablespoons extra virgin olive oil
  • 45 cloves garlic, minced
  • 1/2 teaspoon red pepper flakes
  • 2 cups cherry tomatoes
  • 1/2 cup Kalamata olives, pitted
  • 1 large lemon (juice and zest)
  • 1/2 cup fresh flat-leaf parsley, chopped
  • 1/2 cup feta cheese, crumbled (optional)
  • Salt and black pepper to taste
  • Crusty baguette or pita bread for serving

Instructions

  1. Thaw frozen shrimp in cold water if using, then drain and pat completely dry with paper towels. Season lightly with salt and pepper.
  2. Heat olive oil in a large skillet over medium heat until shimmering.
  3. Add minced garlic and red pepper flakes; stir constantly for 30-60 seconds until fragrant but not browned.
  4. Add cherry tomatoes and cook undisturbed for 2 minutes, then stir and cook for another 2 minutes until soft and bursting.
  5. Stir in Kalamata olives and heat for 30 seconds.
  6. Add shrimp in a single layer. Sear for 2-3 minutes on one side until pink, then flip and cook for 1-2 minutes until opaque.
  7. Remove skillet from heat. Squeeze lemon juice over the shrimp and sprinkle with lemon zest.
  8. Gently stir to deglaze the pan. Scatter fresh parsley and crumbled feta cheese over the top.
  9. Serve immediately with crusty bread to soak up the juices.

Notes

Pat shrimp dry thoroughly to ensure proper searing. Do not overcook shrimp as they become rubbery quickly. Use good quality extra virgin olive oil as it is a main flavor component. If using frozen shrimp, thaw in cold water for 15-20 minutes before cooking. This dish is naturally gluten-free if served without bread.
