Instructions

  1. Prep ingredients: Crack eggs into a bowl and whisk lightly with a pinch of salt. Drain and rinse black beans. Measure spices and grate cheese.
  2. Warm the beans: Place drained black beans in a microwave-safe bowl with 1 tablespoon of water. Cover loosely and microwave for 1-2 minutes until hot. Stir in garlic powder, cumin, and salt. Set aside.
  3. Scramble the eggs: Heat a non-stick skillet over medium-low heat with butter or oil. Pour in eggs and gently push from edges to center until just barely set but still moist. Remove from pan.
