Description

A quick and customizable breakfast sandwich featuring thick-cut crispy bacon, a perfectly runny egg, and melted cheese on toasted brioche or sourdough bread, all cooked in one pan for minimal mess.

  • 68 slices thick-cut applewood smoked bacon
  • 2 large eggs
  • 2 slices brioche or sourdough bread
  • 1 tablespoon unsalted butter
  • 2 slices cheddar or American cheese
  • Salt and freshly cracked black pepper
  • Optional: Hot sauce or mayonnaise

Instructions

  1. Place a large cast iron skillet over medium heat. Lay bacon slices in a single layer, cold. Cook for 2 minutes, then flip and cook for another 2-3 minutes until golden brown and crisp.
  2. Remove bacon to a paper towel-lined plate to drain excess grease, leaving about a tablespoon of grease in the pan.
  3. While bacon finishes, spread butter on one side of each bread slice. Toast bread butter-side down in a skillet over medium-low heat for 1-2 minutes per side until golden and crisp. Set aside.
  4. Reduce heat under the bacon grease to medium-low. Crack eggs into a small bowl, then gently slide them into the pan.
  5. Cook eggs undisturbed for 1-2 minutes until whites are set but yolks are still runny. For over-easy, flip and cook for 30 seconds more. Season lightly with salt and pepper.
  6. Place a slice of cheese on top of the egg. If needed, add a teaspoon of water to the pan and cover with a lid for 10 seconds to melt the cheese.
  7. Assemble the sandwich: Place bottom bread slice on a plate, add bacon, then the cheesy egg. Add optional hot sauce or mayo to the top slice of bread. Press down gently and slice in half.
  8. Serve immediately while warm.

Notes

Use thick-cut bacon for better texture and less burning. Toast the bread thoroughly to prevent sogginess. Keep the egg yolk runny for the best texture. If using turkey bacon, add more butter to the pan as it renders less fat. For gluten-free, use GF buns or lettuce wraps. For dairy-free, skip the cheese.
