  • 1 lb Italian sausage (sweet or hot), casings removed
  • 2 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1/2 teaspoon red pepper flakes (optional)
  • 1/2 cup sun-dried tomatoes packed in oil (drained, oil reserved)
  • 1/2 cup chicken broth (low-sodium)
  • 1/2 cup heavy cream
  • 4 cups fresh baby spinach
  • 1/2 cup freshly grated Parmesan cheese
  • Salt and black pepper to taste

Instructions

  1. Heat butter in a 12-inch skillet over medium-high heat. Add crumbled sausage and cook for 5-7 minutes until browned and crispy. Drain excess grease, leaving about 1 tablespoon.
  2. Reduce heat to medium. Add minced garlic and red pepper flakes; sauté for 1 minute until fragrant but not brown.
  3. Stir in sun-dried tomatoes and chicken broth, scraping up browned bits from the bottom of the pan. Simmer for 2 minutes to reduce slightly.
  4. Add gnocchi directly to the skillet. Pour in heavy cream. Simmer gently for 5-7 minutes, stirring occasionally, until gnocchi float and are tender.
  5. Toss in fresh spinach and stir until just wilted, about 2 minutes.
  6. Reduce heat to low. Stir in Parmesan cheese until melted and sauce is creamy. Adjust consistency with more broth or simmering if needed.
  7. Season with salt and black pepper to taste. Serve immediately with extra Parmesan.

Notes

For crispier gnocchi, boil them separately according to package directions before adding to the skillet. Use fresh spinach for best texture; if using frozen, squeeze out all water. The oil from the sun-dried tomatoes adds significant flavor, so save it to stir into the finished dish. This dish does not freeze well due to the dairy sauce.
