  • 1 ½ cups (300g) granulated sugar
  • 3 large eggs, room temperature
  • 2 tsp vanilla extract
  • 2 cups (250g) all-purpose flour
  • ½ cup (45g) unsweetened cocoa powder (Dutch-processed preferred)
  • 1 tsp baking soda
  • 1 tsp baking powder
  • ½ tsp salt
  • ½ tsp cinnamon
  • 1 cup (170g) dark chocolate chips or chunks
  • 2 large zucchini (~350g), grated
  • 1 cup hickory wood chips, soaked

Instructions

  1. Preheat smoker to 275°F (135°C). Melt butter and let it cool slightly.
  2. In a large bowl, whisk melted butter, sugar, eggs, and vanilla until smooth and glossy.
  3. In a separate bowl, whisk flour, cocoa powder, baking soda, baking powder, salt, and cinnamon.
  4. Gradually add dry ingredients to wet ingredients, mixing until just combined. Fold in grated zucchini and chocolate chips.
  5. Grease two 9×5 inch loaf pans. Divide batter evenly between pans.
  6. Place soaked wood chips in a smoker box or foil pouch with holes over the heat source.
  7. Once steady blue smoke appears, place loaf pans on the center rack. Close lid.
  8. Smoke for 45 minutes without opening the lid.
  9. Open lid, check tops, and tent pans loosely with aluminum foil.
  10. Continue smoking for 15-25 minutes until internal temperature reaches 200°F (93°C) and a toothpick comes out with moist crumbs.
  11. Remove from smoker and cool in pans for 10 minutes.
  12. Flip onto a wire rack and cool completely before slicing.

Notes

Ensure wood chips are soaked for at least 30 minutes to prevent burning. Do not overmix the batter. The bread must reach an internal temperature of 200°F (93°C). Cool completely to prevent gummy texture. For a gluten-free version, use a 1-to-1 gluten-free flour blend.
