  • 1.5 lbs ground beef (80/20 lean-to-fat ratio)
  • 1 medium yellow onion, minced and pre-cooked
  • 1/2 cup plain dried breadcrumbs
  • 1 tbsp Worcestershire sauce
  • 1 tsp garlic powder
  • 1 large egg
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 8 oz crimini or portobello mushrooms, sliced
  • 3 tbsp salted butter
  • 2 medium shallots, minced
  • 1.5 cups low-sodium beef broth
  • 1/4 cup dry red wine (Cabernet or Merlot)
  • 2 tbsp heavy cream
  • 1 tbsp flour

Instructions

  1. Preheat smoker to 225°F (107°C) using hickory or applewood pellets.
  2. In a dry pan, cook minced onion for 3 minutes until soft and translucent; let cool.
  3. In a large bowl, gently combine ground beef, cooled onions, breadcrumbs, Worcestershire sauce, garlic powder, egg, salt, and pepper. Do not overmix.
  4. Form mixture into 6 equal patties (1/2 inch thick) and make a small dimple in the center of each.
  5. Place patties directly on the smoker grate and smoke for 45-60 minutes until internal temperature reaches 155°F (68°C).
  6. While meat smokes, melt butter in a large skillet over medium-high heat.
  7. Sauté mushrooms and shallots for 5-7 minutes until browned and liquid has evaporated.
  8. Sprinkle flour over mushrooms and cook for 1 minute to create a roux.
  9. Pour in beef broth and red wine, scraping up browned bits. Whisk continuously and simmer for 5 minutes.
  10. Reduce heat to low and stir in heavy cream. Season to taste and keep warm.
  11. Remove patties from smoker and let rest for 5 minutes.
  12. Plate patties and ladle hot mushroom gravy over the top.

Notes

Rest the patties for 5 minutes after smoking to redistribute juices. Ensure mushrooms are browned properly to avoid watery gravy. If using lean beef, the patties may be dry; 80/20 ratio is recommended. For gluten-free option, swap breadcrumbs and Worcestershire sauce.
