- 1 medium yellow onion, diced
- 4 cloves garlic, minced
- 2 tsp smoked paprika
- 1 tsp ground cumin
- 1 tbsp chili powder
- 1/4 tsp cayenne pepper
- 1 can (15 oz) pumpkin puree
- 1 can (14.5 oz) diced tomatoes
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup vegetable broth
- 1 tbsp lime juice
- 1/4 cup fresh cilantro, chopped
- Salt and black pepper to taste
Instructions
- Heat olive oil in a large Dutch oven or heavy-bottomed pot over medium heat.
- Add diced onion and cook for 3-4 minutes until softened and translucent.
- Add minced garlic and cook for 30-60 seconds until fragrant, being careful not to burn.
- Add smoked paprika, cumin, chili powder, and cayenne pepper. Stir constantly for 1 minute to bloom the spices.
- Pour in diced tomatoes (with juices) and pumpkin puree. Stir to combine and cook for 2 minutes until bubbling.
- Add black beans and vegetable broth. Stir to combine.
- Bring to a boil, then reduce heat to low and simmer uncovered for 10-12 minutes, stirring occasionally, until thickened.
- Remove from heat and stir in lime juice.
- Season with salt and black pepper to taste.
- Serve hot, garnished with fresh cilantro, sour cream, or crushed tortilla chips.
Notes
Ensure you use 100% pure pumpkin puree, not pumpkin pie filling. For a thicker chili, mash some beans against the side of the pot. For a thinner consistency, add more broth. The flavors improve after sitting in the fridge overnight.
