- 4 to 6 bone-in, thick-cut pork chops (about 1.5 to 2 pounds)
- 3 tablespoons butter, divided
- 3 large yellow onions, sliced into half-moons
- ½ cup all-purpose flour, divided
- 2 cups low-sodium chicken broth
- ½ cup heavy cream
- 4 cloves garlic, minced
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon paprika (smoked paprika optional)
- 1 teaspoon dried thyme or Italian seasoning
Instructions
- Pat pork chops dry with paper towels. Season both sides with salt, pepper, paprika, and thyme.
- Mix ¼ cup flour with a pinch of salt in a shallow bowl. Dredge each chop in the flour, shaking off excess.
- Heat 2 tablespoons butter in a large skillet (cast iron preferred) over medium-high heat until shimmering.
- Sear pork chops for 3-4 minutes per side until golden brown. Remove to a plate and set aside.
- Reduce heat to medium. Add remaining 1 tablespoon butter to the skillet.
- Add sliced onions and cook for 8-10 minutes, stirring occasionally, until soft and translucent.
- Add minced garlic and cook for 1 minute until fragrant.
- Sprinkle remaining ¼ cup flour over onions and garlic. Stir constantly for 1-2 minutes to create a roux.
- Slowly pour in chicken broth while whisking constantly to prevent lumps.
- Add heavy cream and stir well. Simmer for 3-4 minutes until gravy thickens.
- Nestle pork chops back into the skillet, spooning gravy over the top.
- Cover and simmer on low for 5-7 minutes until pork reaches an internal temperature of 145°F.
- Remove lid and let rest for 2 minutes before serving.
Notes
Do not skip the sear on the pork chops as it builds flavor. Use a meat thermometer to ensure pork reaches 145°F to avoid dryness. If gravy becomes too thick, add a splash of broth. Leftovers can be stored in the fridge for up to 3 days. Freezing is not recommended as the cream may separate.
