  • 1 1/2 tsp cream of tartar
  • 1/2 tsp baking soda

  • 1/2 cup granulated sugar (for coating)
  • 1 1/2 tbsp ground cinnamon (for coating)
  • Pinch of salt (optional, if using unsalted butter)

Instructions

  1. Preheat oven to 375°F (190°C). Line baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, and cream of tartar. Set aside.
  3. In a large bowl, beat the softened butter, granulated sugar, and brown sugar on medium-high speed for 3 minutes until pale and fluffy.
  4. Add eggs one at a time, beating well after each addition. Mix in vanilla extract. Scrape down the sides of the bowl.
  5. Gradually add the dry ingredients to the wet mixture on low speed. Mix just until the flour disappears. Do not overmix.
  6. In a shallow bowl, mix 1/2 cup sugar and 1 1/2 tablespoons cinnamon for the coating.
  7. Scoop or roll dough into 1.5-inch balls. Roll each ball in the cinnamon sugar mixture until fully coated.
  8. Place cookies on baking sheets, spacing them 2 inches apart.
  9. Bake for 10-12 minutes. Edges should be set and lightly golden, but centers should still look soft.
  10. Let cookies sit on the baking sheet for 5 minutes to set, then transfer to a cooling rack to cool completely.

Notes

Do not overbake; cookies continue to cook on the hot pan. For chewier cookies, chill dough balls for 30 minutes before baking. Ensure flour is measured correctly by fluffing it first. Store with a slice of bread to maintain softness.
