  • Optional: Blueberries, chocolate chips, or diced apples

Instructions

  1. In a large bowl, whisk together the sourdough discard, milk, egg, and sugar until smooth and the sugar is mostly dissolved.
  2. Add the flour, baking soda, and salt to the wet mixture. Mix gently with a whisk until just combined; the batter should remain thick and lumpy. Do not overmix.
  3. Let the batter rest for 5-10 minutes to allow the baking soda to react with the starter.
  4. Heat a non-stick skillet or griddle over medium heat. Test by flicking water drops onto the pan; they should sizzle and evaporate quickly.
  5. Lightly grease the pan with butter. Pour ¼ cup of batter for each pancake, ensuring not to crowd the pan.
