  • 2 medium sweet potatoes (approx. 1 lb / 450g), peeled and diced into ½-inch cubes
  • 1 can (15 oz / 425g) black beans, rinsed thoroughly
  • 1 medium yellow onion (approx. 1 cup diced / 150g)
  • 3 cloves garlic, minced
  • 1 tsp cumin
  • ½ tsp smoked paprika
  • ½ tsp chili powder
  • 1½ cups shredded Mexican blend cheese (or Monterey Jack and Cheddar mix)
  • 8 large (10-inch / 25cm) flour tortillas
  • 1 tbsp olive oil (plus more for cooking)
  • 1 ripe avocado, sliced (optional)
  • 1 lime, juiced

Instructions

  1. Prep the vegetables: Wash, peel (optional), and dice sweet potatoes into ½-inch cubes. Dice the onion and mince the garlic. Set aside.
  2. Cook the sweet potatoes: Heat 1 tablespoon olive oil in a large non-stick skillet over medium heat. Add diced sweet potatoes and onions. Let sit for 2-3 minutes to brown, then stir occasionally. Cook for 12-15 minutes until potatoes are tender and onions are translucent. Add a splash of water and cover if needed to steam.
  3. Add flavor: Stir in the rinsed black beans. Sprinkle with cumin, smoked paprika, and chili powder. Cook for 2 minutes until fragrant. Add minced garlic and cook for 30 seconds. Remove pan from heat.
  4. Assemble: Wipe skillet and return to medium-low heat. Place one tortilla in the pan. Sprinkle ¼ cup cheese over half the tortilla, add ½ cup filling, then top with another ¼ cup cheese.
  5. Cook until crispy: Fold tortilla over filling and press gently. Cook for 3-4 minutes until edges are golden brown and crispy. Flip and cook other side for 2-3 minutes. Repeat with remaining tortillas to make 4 quesadillas.
  6. Serve immediately with sliced avocado and a squeeze of fresh lime juice.

Notes

Use the ‘cheese sandwich’ method (cheese-filling-cheese) to help the filling stick to the tortilla. Keep heat at medium-low to prevent burning the tortilla before the cheese melts. Rinse beans thoroughly to remove metallic taste and excess sodium. For a gluten-free option, use certified gluten-free flour tortillas or corn tortillas (use two per quesadilla). For dairy-free, use vegan cheese or extra avocado.
