  • 2 large English cucumbers (about 600g), sliced into half-moons
  • 1.5 pounds (700g) ripe tomatoes, cut into wedges or chunks
  • 6 ounces (170g) feta cheese, crumbled by hand
  • ¼ cup (60ml) extra virgin olive oil
  • ½ small red onion, thinly sliced
  • 1 teaspoon sea salt (or to taste)
  • Freshly cracked black pepper
  • Optional: Fresh dill or mint

Instructions

  1. Rinse cucumbers. If using regular cucumbers, peel and scoop out seeds; if using English cucumbers, leave skin on. Slice into ¼-inch half-moons.
  2. Wash tomatoes, remove cores, and cut into wedges or chunks. Add to a large mixing bowl with the cucumbers.
  3. Thinly slice the red onion into rings and add to the bowl. (Optional: soak in ice water for 10 minutes to reduce sharpness, then drain.)
  4. Sprinkle sea salt over the vegetables, drizzle with olive oil, and add black pepper. Toss gently to coat everything.
  5. Let the salad sit at room temperature for 10 minutes to allow flavors to meld and juices to create a natural dressing.
  6. Just before serving, crumble the feta cheese over the top and toss gently to distribute.
  7. Taste and adjust seasoning with more salt, pepper, or a squeeze of lemon juice if desired. Serve immediately.

Notes

For best flavor, use room temperature ingredients. Do not freeze this salad as cucumbers will become mushy. If using regular cucumbers, ensure you remove the watery seeds to prevent sogginess. The salad improves with a 10-minute rest, allowing the salt to draw out juices and create a vinaigrette.
