A comforting, easy-to-assemble nacho bar designed for gentle self-care. Layer sturdy tortilla chips with cheese, beans, and optional lean protein, then bake until golden for a warm, customizable meal that requires minimal effort and cleanup.
Ingredients
- 10 oz sturdy tortilla chips
- 2 cups sharp cheddar cheese, shredded
- 1 cup Monterey Jack cheese, shredded
- 1 can (15 oz) black beans, drained, rinsed, and patted dry
- 1 cup corn kernels (fresh, frozen/thawed, or canned)
- 2 medium jalapeños, sliced (optional)
- 4 stalks green onions, thinly sliced
- 1/2 cup fresh cilantro, chopped
- 1/2 cup sour cream
- 1 cup guacamole
- 1 cup chunky salsa
- 1 lb lean ground turkey or beef, cooked and seasoned (optional)
- 2 limes, cut into wedges
Instructions
- Preheat oven to 375°F (190°C). Line a large rimmed baking sheet with parchment paper.
- If using meat, cook ground turkey or beef in a skillet over medium heat until browned. Season with cumin, chili powder, garlic powder, and salt. Drain excess fat.
- Spread tortilla chips in a single layer on the baking sheet, allowing slight overlap.
- Sprinkle half of the black beans and corn over the chips. Add cooked meat if using. Sprinkle half of the cheese mixture over the top.
- Add a second layer of chips, then the remaining beans, corn, meat, and finally the rest of the cheese.
- Bake for 10-12 minutes until cheese is melted and bubbling and chip edges are golden brown.
- Remove from oven. Immediately sprinkle with jalapeños and green onions. Dollop with sour cream and guacamole. Spoon salsa around the edges.
- Finish with chopped cilantro and a squeeze of fresh lime juice. Serve immediately.
Notes
Do not overcrowd the pan to prevent steaming; use two pans if necessary. Shred your own cheese for better melting. Always dry beans and corn to prevent soggy chips. Add acidic toppings like lime and salsa after baking to preserve brightness. Leftovers do not freeze well; store in the fridge for up to 2 days and reheat in a toaster oven or air fryer.
