Ingredients

  • 1 lb lean ground beef (85/15)
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1 can (15 oz) tomato sauce, low-sodium
  • 2 tbsp tomato paste
  • 2 tsp chili powder
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 1 can (15 oz) black beans, drained and rinsed
  • Salt and pepper to taste
  • 12 hot dogs (beef preferred), cut in half or thirds
  • 12 dinner rolls (brioche recommended), sliced in half horizontally
  • 2 cups sharp cheddar cheese, shredded
  • 1 small jalapeño, sliced (optional)
  • 4 tbsp butter, melted
  • 1 clove garlic, minced (for butter)
  • 1 tbsp oil (for cooking beef)

Instructions

  1. Heat 1 tablespoon of oil in a large skillet over medium-high heat. Add diced onion and cook for 3-4 minutes until translucent.
  2. Add minced garlic and cook for 1 minute until fragrant. Do not let it brown.
  3. Add ground beef, breaking it up with a wooden spoon. Cook for 5-6 minutes until browned. Drain excess fat if necessary.
  4. Stir in tomato paste and cook for 1 minute. Add chili powder, cumin, smoked paprika, salt, and pepper. Stir to coat.
  5. Pour in tomato sauce and add drained black beans. Bring to a simmer, then reduce heat to low. Cook uncovered for 10 minutes until thickened. Set aside.
  6. Preheat oven to 350°F (175°C). Slice dinner rolls in half horizontally.
  7. Place roll bottoms on a baking sheet. Place hot dog pieces on each bottom half.
  8. Spoon a generous amount of chili over each hot dog. Sprinkle with shredded cheddar cheese.
  9. Place roll tops on the sliders. In a small bowl, melt butter with minced garlic. Brush generously over the top of all rolls.
  10. Bake for 10-12 minutes until tops are golden brown and cheese is melted and bubbly.
  11. Remove from oven and let rest for 2 minutes before serving.

Notes

Shred your own cheese for better melting. Ensure chili is thick to prevent soggy buns. Sliders can be assembled the night before and refrigerated; add 5-7 minutes to baking time if cooking from cold. Do not freeze assembled sliders as buns will become mushy.
